Sesame protein is a kind of vegetable protein extracted from sesame meal after sesame oil is pressed. Sesame protein is the main ingredient in sesame meal. Therefore, the further processing of sesame meal actually involves sesame protein. Sesame protein is mainly composed of α-globulin, accounting for about 80%. Its pH value is 3.8-4.0. Sesame protein is dissolved with a dilute alkali solution, and then the pH is adjusted to precipitate the sesame protein isolate. Protease is used to hydrolyze sesame protein isolate and obtain a hydrolyzed sesame protein.
